Sprouted Whole Wheat Pappardelle Pasta with Broccoli and Alfredo Sauce.
A couple of weeks ago at a study session, one of my classmates had one of those Weight Watchers fettuccine alfredo with broccoli microwave dinners. I used to love those things, and I really had a craving. So the next day, I made my own version. It was delicious. Problem was, I did the whole make a roux, add soy milk and Teese route, and when I looked at how many calories were in my version, I was floored. It certainly was not in the spirit of the Weight Watchers style dinner. So I tried again today, using a silken tofu base. It came out pretty good, though not particularly cheese-y tasting. I’m not ready to post a recipe on this yet, as I plan to try again, this time with water-packed silken tofu rather than vacuumed packed, and some seasoning adjustments. Stay tuned!
