It’s getting much harder to keep up with the blogging. This is a tough semester. I knew that it would be to an extent, but not nearly as bad as it has turned out to be. So eating well suffers. What has helped is that I did some planning ahead, as you will see here is more planning ahead.
Aside from some frozen vegetables, there’s not a whole lot of “convenience food” here. Well, much of it is convenient, but I made it myself, so I know what’s in it and have a lot of control. I’ve got several meals, chili and soups, plus frozen rice and beans …
…and a whole bunch of vegan sausages that I made from Vegan Brunch: Homestyle Recipes Worth Waking Up For–From Asparagus Omelets to Pumpkin Pancakes.
It helps. I took this picture a few weeks ago, and pickings are getting sparse, but it definitely helps.
