Vegan Nursing Shoes

I noticed that a search for “vegan nursing shoes” brought someone here, and thought that was a topic I shamefully neglected!

This particular pair is not made any more (but they’re holding up several years later!), but Dansko has a newer line of vegan clogs you can check out! Good shoes are so important in nursing, when you’re on your feet all day.

I have a pair of felt Dansko clogs that I bought on closeout last year. Those happen to be vegan (and you may still be able to find them, though it’s probably easier if you have really small feet and no one else wears your size, like me). As far as I know, none of the other Dansko clogs are vegan. However, Crocs are vegan, and you can buy plugs for the holes if the hospital you work in doesn’t allow shoes with holes in them. Ways to Beat the Heat, #1

Since we can’t live on soy ice cream alone: fruit. Don’t have to cook it, it tastes great cold, and can be mixed up into a very tasty and sweet salad. This one is made up of pineapple, mango, strawberries and blueberries.

Have you ever been strawberry picking? My mom used to take my brother and I here. Something you might notice when you pick your own, is that most of the berries are on the smaller side. Sure, there’s always the ones that are two strawberries fused together, but you don’t see the giant ones, unless you happen to be picking the giant variety (like the ones used for chocolate dipped strawberries). But when you buy conventional ones at the grocery store, you get huge ones, thanks to genetic modification. This is a reason to buy organic- that, and that strawberries tend to be one of the most heavily pesticide-laden fruits out there. Plus, when you can get the small ones, they taste better!

Of course, buying them at the local farmer’s market is usually the better option, but I didn’t go this week, and they didn’t have them the week before. Ones at the farmer’s market might not be totally organic, but they will probably taste a lot better than the ones from Stop & Shop.

This was the first time I’ve ever bought a whole pineapple before. It wasn’t that hard to cut, though I’m not ready to do a tutorial yet. It’s incredibly sweet- right up my alley!

Hot!

It is very hot. I went to Trader Joe’s today to buy soy ice cream, among other frozen things, like fruit for smoothies. While I was putting the groceries in my car, I whacked my face against the car door, and probably broke my nose (I won’t know if it’s actually broken unless it looks crooked after the swelling goes down in a week, in which case they’ll do an x-ray). To top it off, it is 90F in my apartment right now, even though it’s only 80F outside. With all that, is it any wonder I ate Cherry Chocolate Chunk Soy Cream for dinner?

See? Picky isn't so bad!

Well, my state isn’t one of the ones affected by this one, but apparently disliking raw tomatoes isn’t such a bad thing!

I haven’t done much looking into this, but I’m willing to bet that the salmonella in the tomatoes is somehow related to factory farming practices of some animal, with the water used for the tomatoes getting contaminated with animal poop.   As if another reason was needed to think factory farming is bad…

(Almost) Summer Nights…

I think you will be seeing a lot more pictures like this in the coming months.

I live in a very nice little studio apartment, with a tiny kitchen, no air conditioning, windows on only one wall and on the 6th floor of my building, which also happens to be the top floor. Even boiling water for pasta this evening was torturous in terms of the heat. So, it’s cold foods for me. Boiling pasta or other grains will happen in the mornings when it’s still a little chilly, and large salads will be made. And Popsicles. And iced tea. I will get through the summer without breaking down and installing an air conditioner.

The salad above was made with fresh greens from the farmer’s market, which also included some edible flowers (which I actually don’t like to eat, but they sure are pretty on a salad. Or a cake. I put them all over my birthday cake last year, but the pictures never made it off of my camera. I guess I’ll have to try again this year, though I’m not sure how much I really want to bake a vegan cake in July without air conditioning). Served with some Chicken-less Strips from Trader Joe’s.

A Thought for This Evening

I was all set to write a rant about this obnoxious article when I got home later (warning, it will probably make you mad and gross you out- it’s about trendy hipster chicken farming and slaughter), but then I actually went to work. I saw a family this afternoon who only got to eat dinner last night because of someone else’s kindness- and they had to split this plate meant for one between the three of them. This is what it’s been like for this family since the mom lost her job a couple of weeks ago. It wasn’t much better before then.

I had a list of local soup kitchens and pantries to give them, and hopefully they’re able to eat tonight. It makes me want to come home and cry when I see stuff like that. I like to complain about my bills, but I eat every day. I got to buy nice clothes last week and I go to an elite school where I may have to take out student loans, but am training for a profession where I should be able to pay them back without extreme hardship. In other words, I’m lucky. Or blessed. Or a number of other things- grateful being one.

Where does veganism fit into this? When people challenge us and say that veganism is expensive, we’re often quick to point out that it can be done very cheaply, when relying on whole grains, beans, legumes and vegetables. Well, not everyone can afford those- but their canned and other shelf-stable counter-parts make excellent donations to your local food pantry. So go out and donate. Call first to see if they have specific items that they won’t take or have a specific need for. Most pantries will only take canned and dried goods that are packaged (e.g., they won’t take beans from the bulk bin or fresh or frozen produce). There’s an awful lot that we can donate that stays within our own ideals about food and animal compassion. Beans, lentils, peanut butter, rice, pasta, spaghetti sauce, cereal, canned fruits and veggies and 100% fruit juice are all foods that happen to be vegan that most food pantries need. Many pantries will take anything that’s non-perishable, but I would check before bringing things like shelf-stable tofu or soy milk. It’s not that people are ungrateful, but it can be really intimidating to have tofu be your option for dinner when you haven’t eaten all day and you have no idea how to prepare it or if you’ll like it. Though, I’ll bet things like Chocolate Silk would be well received, especially for the kids.

People often donate food at the holidays, which is great, but there are other people out there who are hungry all year. So go out and donate- your food, your time, your money- whatever you’re in a position to do and feels comfortable to you (if you do donate money, it could go to the purchase of animal products, but it also might be going to the general cost of running the pantry). Do it because it’s Wednesday. Do it because you ate today. Do it because there’s a certain injustice in being able to make all these delicious vegan recipes that appear in vegan food blogs when there are others who eat nothing. Do it because if you didn’t eat it was because you were busy or chose not to. Do it because I saw a family today who was in need of food on a warm day in June.

If you’re not in a position to do so right now or are in need of food yourself- that’s what your local food pantry is for. Pay it forward when you can.

Nutrition Class

I have just finished my final exam from my nutrition class, and I thought I’d share a couple of thoughts on how veganism is portrayed in such a class. You might be surprised to hear that not a bad word is said about it. My teacher, a well-known nutrition expert who has been featured on Good Morning America and Oprah, never said one negative word about veganism. I have learned a little bit about how nutrition experts in the media work at this point. Veganism isn’t his thing- promoting the intake of fish for Omega-3 fatty acids is, so he doesn’t advocate a vegan diet. I’ve learned that when it come to media appearances, they’re given very little time, don’t have total control over what they get to say, and more or less have to stick to one viewpoint. I think that’s an important lesson.

I must admit that my attendance in classes has been sparse in this leg of the semester, but I did happen to attend the class on macronutrients (proteins, fats, carbs- the basic building blocks), and I asked him about the fats issue. He did point out that contrary to what many of us think, we’re not very good at converting other fatty acids to Omega-3s, so supplementation is necessary (i.e., you’re not getting all that you need by sprinkling some flax on your cereal in the morning. Which, by the way is not specifically a vegan/vegetarian issue- there are plenty of omnivores who don’t eat fish. I used to be one of them. I’ve always thought fish is absolutely vile- and I grew up on Cape Cod, where I had plenty of access to the fresh caught stuff). He suggested supplementation with an algae-based product called neuromins. Like many supplements, it comes in a gelatin capsule. There are liquid alternatives available that makes it totally vegan- here’s a google search to get you started.

So that’s it. Supplement your diet with omega-3s and B12 (which I’m sure you already knew), since they’re not abundant in plant sources, and make sure you’re getting enough (but not too many) calories, eat lots of plants and make sure you’re getting your calcium in some form (again, not just a vegan issue), and you’re good. Not only are you good, but with those caveats, you’re awesome, nutritionally speaking. And if you go to a health professional who says otherwise- you might want to explain exactly what it is that you DO eat. If they’re not receptive to listening to that, then you might want to look elsewhere for care. No one should be giving you a hard time if your diet is meeting all the nutritional requirements you need, regardless of where you get them from.

That said, not all vegans meet their nutritional requirements. Neither do all omnivores. Most Americans get far more calories in their diets than they expend (myself included). There are definite diet issues that we all need to look at, but it can absolutely be done in the context of a vegan diet for most people.

And now on to studying for the Pediatrics mid-term… yes, that’s right, I said mid-term. In June. Bah.

Chickpea Omelette

A while back I made an Indian Omelette, which uses chickpea flour as its base, with Indian spices. I liked that, but wanted to try one that might be a little more like the omelettes that I used to eat. Chickpea flour does have taste that similar to eggs. The recipe is so simple it’s not really a recipe. I used a half cup of chickpea flour, then just enough water to make it more or less like pancake batter. The salt and pepper, and diced veggies and herbs (garlic, parsley, basil, red pepper, zucchini and summer squash) and then cooked it more or less like a regular omelette, then folding it and stuffing it with spinach, steamed asparagus, sautéed red onion and teese. It was great, the only drawback being that it’s a little dry. Granted, I’d had plenty of egg omelettes that were just as dry, so perhaps this is normal. I think that for my taste, I might add a little soy milk or soy yogurt to the base next time.

A note about the napkin- I really prefer to use reusable napkins. I bought these ones recently on Etsy, from this seller. She’s got lots of other ones, as do other sellers on Etsy. Check them out! And no, I’m not paid for this endorsement; I just think handmade items are mighty cool.

This recipe comes from the most recent issue of Vegetarian Times. The alterations I made were pretty minor- mostly more veggies and less noodles, using parsley instead of mint and leaving out the cilantro and peanuts. It’s very filling, tasty and so far has kept well for at least one day in the fridge!

Did you know it’s difficult to take a picture of shoes while you’re wearing them?

I just got these from Endless.com this morning, and I had to show off their vegan-ness. Well, at least non-leatherness. They’re very cute, and surprisingly comfortable. I mean, you couldn’t pay me to walk to work in these, but I think they’re fine for wearing around a place you’ll be staying for the day.
