Roasted Caprese Pasta

My current schedule has me home most mornings, and I’ve developed a habit I’m ashamed to admit: I sometimes watch Rachael Ray. I usually skip the beginning, because I still think she’s annoying, but she has food towards the end that’s often not too hard to veganize. They’re usually fast, easy, and surprisingly don’t rely on a whole lot of processed foods, at least of the ones I’ve seen. So, tonight’s dinner was straight from one of her shows last week: Roasted Caprese Spaghetti. I left out the Parmesan cheese, and substituted Teese for the Mozzarella. My pesto was a little different, as I didn’t have any arugula or tarragon. I used spinach and parsley in their places. I think the tarragon would have been a very interesting addition; I’m not crazy about arugula, but maybe I’d try it in this sometime.

You might notice, this recipe is full of whole grape tomatoes. I loved them. Roasted with olive oil and salt, they were delicious. I think they are absolutely vile and slimy when just tossed into a salad, but here they were fabulous. Definitely a thought for a picky eater who doesn’t like tomatoes.

Obviously I subbed penne for spaghetti, mostly because the penne was in reach and didn’t require me to get a step-ladder to get it down from the cupboard (I’m short. What can I say?). Served with pomegranate iced tea.

When no one is happy about the food…

I went to an event for work this evening, where they were serving dinner. I think you know it’s not a great meal when even the omnis leave unsatisfied! It was just… meat. There was pasta as well (pasta alla vodka and bolgnese), but other than that, there was a table with roast beef, and a table with ham. No side dishes. No salad. A few appetizers (including crudités, with grapes that were apparently just for decoration, but which I took to eat) and bread. Not even a dessert, and this was also an awards ceremony! I mean, even I was disappointed there was no cake, even though I know I wouldn’t have been able to eat it.

I asked one of the servers if they had any pasta without sauce, so I ended up with a plate of penne with olive oil. Eh. People felt bad, but I pulled out my iPhone and showed them some of the pictures of my delicious food I make at home. No one felt bad for me after that!

WIC, Food Stamps, and Veganism

Today on Megan McArdle’s column for the Atlantic Monthly, she posted about the WIC (Women, Infants and Children) program, and that it blatantly supports the dairy industry. True, sort of. Last year, it was announced that WIC would be undergoing reform. It will (this fall, allegedly) be providing whole grains, fresh fruits and vegetables, as well as soy beverages and tofu. So while it stinks for now that vegans can’t get soy milk and such, that should be changing in the coming months (check with your state’s WIC program for details).

Erik Markus of Vegan.com picked up the post, but attributed it to the Food Stamp Program. I feel the need to post this because I’d absolutely hate to see a vegan in need of food stamps google “vegan food stamps” and find a major blog saying that they can’t be used to purchase vegan foods. That is incorrect. Food stamps can be used to purchase any food in the grocery stores, except hot or “to-go” foods. They also can’t be used to purchase pet food or toilet paper, or other non-food products. You can purchase anything else, vegan or not, from fillet mignon to tofu to Doritos to an apple with food stamps (and I use that terminology because the program is technically still called “food stamps,” although the actual paper stamps from days of yore have been replaced with an EFT card).

So why is there also the WIC program, you might ask? WIC is meant to provide foods that will optimize the development of infants and young children. Young children (under age 2) actually need a fair amount of fat in their diets. It seems counter-intuitive with the rising rates of obesity in America, but it’s true. No, they don’t need to be eating junk food, but they do need some fat for adequate development of their nervous systems. I think it’s reasonable to say that at the time that WIC was developed, that was really the only thought that was put into choosing “nutritious” foods. At any rate, not everyone who qualifies for WIC also qualifies for food stamps, and these days food stamps don’t go all that far, so the additional foods that WIC provides can be vital. I know that frequently when people see a post about food stamps or other social service programs, they often become defensive and talk about the lady in front of them in line who paid for her groceries with food stamps and then jumped in her Escalade or what have you, but that’s really unfair. I’ve been working in social service programs for the better part of the last 13 years. Just because you see someone with a sign of wealth (fancy car, credit card) doesn’t mean that they have money to spare. You don’t know that the car belongs to that person. They might be borrowing it from the neighbor. Unfortunately today many people have no other choice but to use credit cards (gold or not) to pay for the balance of their groceries. I’ve seen over the years people who didn’t get to eat when their food stamps ran out. People who have to “shop” at the food pantry when it gets to be the end of the month. This really happens, and I’ve seen it. Really.

Now that I’ve rambled on, jut a reminder: food stamps can ABSOLUTELY be used to purchase vegan foods.

Wheatgrass

It turns out that the nasturtium seeds I had purchased were not suitable for container gardens, so they didn’t really take. I did think that this was a nice sized container for a “lawn,” but I didn’t want to have to buy a big bag of grass seeds. So, instead I picked up some wheatberries from Edge of the Woods, soaked them and planted them. Now I have wheatgrass!

I don’t have a wheatgrass juicer, nor have I even tried wheatgrass juice, so I’m using the grass clippings I’ve been taking to mulch my other window boxes. I have to say though, my favorite part of having this is just to run my hand over it. It’s so lush! And yes, I am strange, but that’s okay. 🙂

Fettuccine Alfredo

Sprouted Whole Wheat Pappardelle Pasta with Broccoli and Alfredo Sauce.

A couple of weeks ago at a study session, one of my classmates had one of those Weight Watchers fettuccine alfredo with broccoli microwave dinners. I used to love those things, and I really had a craving. So the next day, I made my own version. It was delicious. Problem was, I did the whole make a roux, add soy milk and Teese route, and when I looked at how many calories were in my version, I was floored. It certainly was not in the spirit of the Weight Watchers style dinner. So I tried again today, using a silken tofu base. It came out pretty good, though not particularly cheese-y tasting. I’m not ready to post a recipe on this yet, as I plan to try again, this time with water-packed silken tofu rather than vacuumed packed, and some seasoning adjustments. Stay tuned!

Words of Wisdom from a Shirley Temple Movie

This morning after I called my mom to wish her a happy Mother’s Day, I watched a Shirley Temple movie called Captain January. Shirley’s character has to take a placement exam for school, and her guardian in the movie is reviewing some bible stories with her, as he had told the Truancy Officer that she studied it daily. He asks her about the story of the prodigal son, and then asks, “Who wasn’t happy that the prodigal son came back?” Her answer? “The fatted calf.”

I’d totally give her credit on an exam for that answer!

Pasta & veggies

I’ve been mostly eating sandwiches and leftover lasagne this week, so I haven’t really had much to post. I did make a nice pasta and veggies dish this evening, with zucchini, yellow squash, red pepper, spinach, onion, garlic, basil, sun-dried tomatoes and corn, along with whole wheat penne. Very delicious.

Crêpes, 2 ways.

Crêpes seem to be the rage in several vegan flood blogs lately, so I thought I’d jump on the bandwagon. I’ve made crêpes exactly two times in my life before- once at a friend’s sleep-over 13th birthday party, and once with another friend for high school French class. I still need some work with flipping and with getting them thin enough, but these were pretty good for a first solo try, and for not having made them at all in oh, 15 years or so (am I really that old? Sheesh). I used this recipe that The Urban Vegan posted earlier today.

For these savory crêpes, I “filled” with Trader Joe’s Beef-less Strips, sautéed onions and steamed haricôts verts, and drizzled with balsamic reduction. I had halved the crêpe recipe to begin with and didn’t make the batter thin enough plus I don’t have the hang of spreading them out on the pan quickly, so the crêpes weren’t really big enough to wrap around the filling.

For these sweet ones, I did manage to thin the batter a little better. Two are filled with some leftover raspberry sauce (frozen raspberries, agave nectar, apple juice and tapioca starch), and one is filled with a square of melted ricemilk chocolate. Then they’re just topped with a bit of powder sugar to make them look even prettier.

This was an amazingly good dinner, and really wasn’t very hard. It took me about 20 minutes start to finish for the savory crêpes, and then maybe another 10 (if that) for the sweet ones, using leftover batter. I will definitely make these again.
